New Norfolk Distillery is Tasmania’s rum‑focused upstart, operating out of the historic Willow Court site in the Derwent Valley. A former hospital complex now home to their fermenters, pot still, and cellar door. Since 2019 they’ve been making their own long‑fermented molasses and cane washes, distilling, ageing, and bottling entirely on site, with a small team producing modern rums, gins, liqueurs, and wild‑fermented cane spirits that have quickly earned international recognition.
