Edradour 'Ibisco' Bourbon Cask 2013/10yo 700mL
Edradour’s Ibisco Bourbon Cask release shows the Highland distillery in a brighter, more playful light. Traditionally known for sherry-heavy styles, this small-batch bottling is matured in first-fill ex-bourbon casks and presented at natural cask strength.
The nose brims with vanilla bean, butterscotch, coconut, and sugar syrup, lifted by hints of citrus peel and soft floral spice. On the palate, it’s full-bodied and robust, with layers of honey, toasted oak, dark chocolate, and fresh herbs, opening beautifully with a splash of water. The finish is warming and gently spiced, leaving echoes of sweetness and subtle oak.
Bottled in the distinctive Ibisco decanter, this whisky is both a collector’s piece and a showcase of Edradour’s versatility. Proof that the smallest Highland distillery can deliver big, bold bourbon-cask character.
Edradour, founded in 1825 in Pitlochry, Perthshire, is one of Scotland’s most picturesque and traditional distilleries, long celebrated as the country’s smallest. For much of its history it produced only a handful of casks each week, and even after its 2018 expansion it remains a boutique operation. Since being acquired in 2002 by Andrew Symington of Signatory Vintage, Edradour has focused on single malts and distinctive cask-led releases, championing authenticity through handmade methods, worm tubs, and long fermentations. Its house style is dense and nutty, often matured in sherry or wine casks, while its peated line, Ballechin, shows the distillery’s versatility. With non-chill filtration, natural color, and a philosophy of small-batch craftsmanship, Edradour continues to embody the charm of Highland whisky “the way it used to be.”
